How we make VegChees plant-based vegan cheese mixes
Most of our VegChees cheeses start from a base of flax seeds, chia seeds, nutritional yeast, kale flakes, pea protein or garbanzo protein.
We then add our magical combination of spices to that base.
How to make VegChees plant-based cheese with these mixes
Decide how much filtered water to add. We recommend about 2 tablespoons of water to 6 tablespoons of VegChees cheese mix.
Decide what oil and how much oil to add. We recommend about 1 tablespoon of oil to 6 tablespoons of VegChees cheese mix.
Then taste some and eat some.
Then if need be, add a little more water and/or oil if you think your cheese needs it.
Then decide whether or not to refrigerate it to harden up your cheese.
Then eat some later and feel grrrreat.
Then make more VegChees plant-based vegan cheese.
Then eat some tomorrow and feel grrrreater.
Recipe options:
Add Agar Agar to make the cheese firm. Agar Agar is a vegan gelatine powder. Kapa carrageenan works too.
Add lemon juice or apple cider vinegar to give your cheese a little bite.
Add tapioca starch or tapioca flour to make a cheese that melts and stretches. Less tapioca makes a cheese that need higher heat to melt. More tapioca makes a cheese that is softer, and maybe to soft to grate or slice. Other starches may not make the cheese as stretchy and melty as tapioca starch.

Jalapeno Chili Wind ::
1.5 cups flax ground seeds, 1.5 cups nutritional yeast, kale flakes, hot jalapeno flakes, chili, and other spices [mildly hot]
Caraway Pepper Earth ::
1.5 cups flax ground seeds, 1.5 cups nutritional yeast, kale flakes, ground and cracked caraway and pepper seeds, and other spices
Cumin Pepper Ice ::
1.5 cups flax ground seeds, 1.5 cups nutritional yeast, kale flakes, cumin, pepper, and other spices
Anise Fennel Hill ::
1.5 cups flax ground seeds, 1.5 cups nutritional yeast, kale flakes, ground and whole anise and fennel seeds, and other spices

I want to make a little VegChees co-op business. Hoping some of you plant-based and vegan peeps would like to join this VegChees.org home based business.
I have been making dry vegan cheese mixes that can be used dry, or one can add water and oil to make it a solid or saucy cheese. You can make your own VegChees flavor version or use one of my recipes.
If we both decide that we want to work together, when I or you get an order for the unique VegChees flavor that you make, you get to make and fill that order. In most cases, customers will correspond with you and send you the money.
Once you fill a few orders, just send me a little bit of sales price for helping you get those orders.
A commercial kitchen is not needed to make these dry, non-perishable VegChees mixes. It is in the cottage industry category in Colorado and in a lot of other US states.
Because these plant-based cheeses can be shipped dry and a person gets to add the water and oil, that makes these cheeses far more affordable.
Because we add ground flax seeds and nutritional yeast to VegChees it has omega-3 ALA and vitamin B12. Most plant-based cheeses don’t have omega-3’s and B12.
One of the reasons that some people may not go full plant-based may be the craving for more omega-3’s and B12 in their diet. That’s why VegChees contains flax seeds and nutritional yeast.
We want to give people a plant-based cheese that has a lot of omega-3 ALA and vitamin B12.
VegChees plant-based cheeses have healthier fats and protein than dairy based cheese. VegChees has more omega-3’s and B12 than dairy cheeses too.
We may add algae based omega-3’s epa and dha to the recipes in the future. Tell us what you think.
